Lentil Burger with Cucumber Mint Yogurt Sauce
Ingredients:
Lentil Burgers: 1 red onion
1 bag of green lentils
Chicken broth
½ cup of grated raw carrots
¼ cup of finely chopped black olives
¼ cup of crumbled feta cheese
Italian Seasoning
Red pepper flakes, to taste
Salt and freshly ground black pepper
Yogurt Sauce:
1 cup of plain yogurt
½ cup of chopped cucumber
¼ cup chopped mint
½ lemon, juiced
Directions:
Lentil Burgers: Sauté diced red onion (small). Add dash of red pepper flakes, and the dried seasoning. Once onions are soft, stir in green lentils, and then add chicken broth to cover. Cook for 30-40 minutes, until soft. Let cool. Stir in grated raw carrots, chopped black olives, and feta cheese.
Add salt and ground black pepper to taste. Form into patties, then pan fry.
Yogurt Sauce:
Combine all ingredients, cover and chill.
Serve the burgers on toasted buns/ciabatta bread.
